Cherry Pie Thumbprint Cookies

Do you have a bucket list, or a list of things you want to before you die? Mine has been a work-in-progress for as long as I can remember. I am very much, a goal-oriented person. I am also crazy about making lists, so this kind of hits both sides for me. If you haven't started a bucket list yet, I highly suggest that you do.

They help keep you inspired by your long-term horizions. Whether its climbing Mount Everest or writing a novel, you cannot go wrong. These lists allow to to embrace your inner dreamer. They also keep things in perspective, and prevent you from allowing yourself to get stuck in life. If you do one thing this summer, I say it should be starting your bucket list!

Recipe:


Preheat oven to 350 degrees,

and line a baking sheet with parchment paper.

Cream together butter and sugar. Add almond extract

Gradually add flour. Be careful not to overmix.

Roll into 1 inch dough balls, and lightly press thumb into

each cookie, and place about 1 inch apart on the baking sheet.

(I recommend freezing the cookies for 15 to 20 minutes before baking.

This will really help prevent them from spreading.)

Scoop 1 cherry into each cookie.

Bake for 14 to 16 minutes.

Allow to cool on cooling rack.

Meanwhile, melt white chocolate in a bowl.

Place in a piping bag, and lightly drizzle over cooled cookies.
